Bayes with SA seems iffy.  There is one school of thought that says "teach 
with only 200 messages at any time" (Barracuda and friends).  And the other 
that says "teach with every message possible" (most people).

If you really want to fight Spam, greylisting is the answer.  Its not for the 
faint of heart, but the 50 bazillion threads about it on the postfix@ list 
should give you a clear idea of what other real mail admins think about it,
