I've had generally good luck with the following combos:

* AMD CPU and VIA chipsets
* Intel CPU and Intel chipsets

You should certainly be able to find a combo that has a proc that 
supports AMD64 and hits the price mark.

One combo that I've avoided has been anything with an Nvidia chipset - 
can anyone comment how well those are supported these days? What parts 
of the chipset are well supported now (I know that some of the stuff - 
Ethernet, at least - had to be backwards engineered for kernel drivers).
