Thanks...I found out the real problem.
This box
(I didn't mention before, this is a Shuttle XPC...)
has a setting Hard Disk Priority, to choose whether USB disks
should be probed for boot before Hard Disks (as a detail of
the boot order, when Hard Disk is selected)
For whatever reason, this logic didn't do what
I hoped it would...so it was finding no bootable
medium on the (missing) USB stick, and stopping.
Disabling USB booting caused it to boot.
However, in the interim, I had created another
partition and installed vanilla Debian 3.1, so
that is what booted, but Peter's note told
me how to find the grub configs...and now
I have a box that has debian minimal on sda3 and
KNOPPIX on sda1.
